Izakaya “Addictive” Cabbage Recipe
“Yamitsuki Kyabetsu” literally translating to “addictive cabbage” in Japanese, is probably most widely known for being an izakaya staple. Izakaya are a type of bar or tavern (for lack of a better example) where you go with colleagues or friends to hangout and drink and eat for an extended period of time. Many people might recognize this particular dish from the famous chain, Gyu-Kaku, and lucky for you, my mom found a recipe that has easily become one of our family “go-to” recipes for years.
Also, lucky for you, I am going to jump right into the recipe and spare you the essay…
addictive cabbage recipe
Ingredients:
1/4 head of cabbage
1/4 to 1/3 tsp salt
1/3 tsp grated garlic or garlic granules
1/2 tsp of konbu seasoning, or dashi
toasted sesame oil (ごま油/ごまあぶら)
black pepper to taste
Directions:
Chop cabbage into “chip” like chunks and separate leaves.
Put all the ingredients into a big bag (or bowl…) and very gently move the contents around to distribute the seasoning evening around the cabbage.
DONE!
Caution: Don’t shake plastic bag or move the contents around too vigorously or the cabbage will absorb too much moisture and becomes like tsukemono (pickled cabbage).
